Spiced Lemon Meatballs Recipe (serves 4)

Servings: 1 protein, ½ oil

Meatballs/Broth

  • 2 tsp olive oil, divided >1 cup chicken broth (plus more as needed)
  • 1 onion, chopped finely > ½ tsp lemon zest
  • 2 cloves garlic, minced > ½ tsp ground cumin
  • ½ tsp ground cumin > ½ tsp turmeric
  • ½ tsp paprika
  • 1/3 cup chopped parsley
  • 1 lb very lean ground beef
  • 2 eggs
  • ½ tsp lemon zest
  • Sea salt and freshly ground black pepper to taste

Heat 1 tsp oil in fry pan. Add onion, garlic, and spices and sauté for a few minutes. Add to ground beef in a medium bowl, and mix in remaining ingredients. Shape into size of golf balls. Heat 1 tsp oil and brown meatballs fro about 2 minutes. In a small pot, heat broth with spices and lemon zest. Add to meatballs and simmer until cooked through and broth is thickened. Add additional broth if needed to keep from becoming too dry.
TIPS:

  • Serve with the sauce/broth on a bed of freshly steamed green veggies.
