Snack Recipe: Spicy Mixed Nuts (serves 36 at 2 Tbsp each)

Servings:1 nut/seed

  • 3 Tbsp olive oil > ¼-1/2 tsp chili powder
  • 2 cloves garlic, minced > 1 cup whole almonds
  • 1 tsp wheat-free tamari sauce > 1 cup whole hazelnuts
  • ½ tsp ground cumin > 1 cup pecan halves
  • 1 tsp curry powder > 1 cup walnut halves

Preheat oven to 350 degrees. In a heavy skillet, heat oil over medium heat. Sauté garlic for 20 seconds, stirring constantly so as not to burn. Add remaining spices and stir well. Then add nuts and mix well until all nuts area coated with spices. Transfer mixture to a baking sheet. Bake 15-20 minutes, stirring every 3-4 minutes to be sure all nuts are evenly baked and do not burn. Remove from oven and cool. Store in an airtight container.
