  • 4 oz bulk turkey sausage
  • > 5 large eggs, beaten
  • 8 oz mushrooms, cleaned and thinly sliced
  • > 5 scallions, thinly sliced
  • ½ cup lowfat cheddar cheese, shredded
  • > ½ medium red or yellow pepper, chopped
  • Preheat oven to 350 degrees. Line 4 large muffin pan cups. In a medium skillet, cook the sausage, crumbling it as it browns. Add the mushrooms and scallions and continue to sauté, stirring, for about 4 minutes. Then add the pepper and cook for 5 minutes more, until all veggies are softened. Spoon mixture into a bowl and cool slightly. Stir in the eggs and pour into the muffin cups. Sprinkle cheese on top. Bake for 20 minutes or until eggs are set. Serve immediately or make ahead and warm the next morning for a quick breakfast.
