Quinoa Vegetable Soup

Serving Size: 1 cup

Yields: 4-6 servings

Ingredients:

 

¼ cup quinoa, well rinsed

½ cup carrots, diced

¼ cup celery, diced

2 Tbsp. onion, chopped

¼ cup green pepper, diced

2 cloves garlic, chopped

2 tsp. olive oil

4 cups water

½ cup tomatoes, chopped

½ cup cabbage, chopped

Salt and pepper to taste

¼ cup fresh parsley, chopped

 

Instructions:

  1. Sauté quinoa, carrots, celery, onions, green pepper, and garlic in oil until softened.
  2. Add water, tomatoes, and cabbage and bring to a boil.
  3. Simmer 20-30 minutes or until tender.
  4. Season to taste and garnish with parsley.
