Pumpkin Overnight Oats

Serving Size: 1/6 recipe (~3/4-1 cup of mixture)

Yields: 6 servings

Ingredients: 

2 cups old fashioned rolled oats (can choose gluten-free)

2 tablespoons chia seeds

2½ cups milk of your choice (I used almond milk)

½ cup pumpkin puree (not pumpkin pie filling)

3 tablespoons agave nectar

½ teaspoon ground cinnamon

½ teaspoon pumpkin pie spice

24 pecan halves or walnuts

 

 

Instructions: 

  1. Place the oats and chia seeds in a large bowl and stir to combine.
  2. In a medium bowl, whisk together the milk, pumpkin, agave, cinnamon, and pumpkin pie spice. Add the wet ingredients to the oat mixture and stir to combine.
  3. Cover with plastic wrap and place in the refrigerator for a minimum of 4 hours or overnight.
  4. Sprinkle each of the 6 with either 4 pecan halves or 4 walnuts.
