Mint Tahini Dressing

First Line Therapy Servings:

1 Serving = 2 Tbsp.

1.5 Nuts & Seeds

Ingredients:

  • 1 clove garlic, chopped 
  • 1/4 cup fresh lemon juice
  • 2 tbsp. finely chopped fresh mint
  • 1/4 tsp. salt
  • 1/2 tsp. red pepper flakes (optional)
  • 2 tbsp. tahini (My note: You may need to leave the tahini out at room temperature for about 30 minutes if it has been refridgerated so it will be easier to combine when you are whisking.)

Whisk ingredients until well combined. Add 1 tsp. water in a slow stream, if required to adjust thickness. Dressing should pour easily but not be watery. Serve over roasted vegetables or salad (Option: Skip the water and add a spoonful of nonfat plain Greek yogurt if you’d rather use it as more of a dip than a dressing).

Makes 4 servings (2 tbsp. per serving)

Nutrition facts per serving: 49 calories, 4g fat, 1g saturated fat, 3g carbs, 0g fiber, 1g protein.
