Herbed Spring Peas

First Line Therapy Servings:

1 Serving = 1/2 cup

1 Legume, 1/3 Oil (0.33)

Ingredients

  • 1 pound shelled peas
  • 1 1/2 tablespoons Earth Balance Spread (Modified to fit First Line Therapy- original recipe called for butter)
  • Salt and pepper
  • 1/4 cup coarsely chopped fresh chervil (a classic spring herb)
Directions

  1. Cook peas in boiling, salted water until tender, 3 to 5 minutes; drain. Return to pot over low heat; add butter and season with salt and pepper. Toss with chervil.
