Double Chocolate Mint Smoothie

First Line Therapy Servings: 

1 serving = 1/2 recipe (~16 ounces)

1 Dairy, 1 Nut & Seed, 1/2 – 1 Medical Food (0.5 – 1.0)

Serves: 2
Hands-on time: 5 minutes
Total time: 5 minutes

INGREDIENTS:

  • 8 oz low-fat milk (skim or unsweetened rice, soy or almond milk for Dairy Free Version)
  • 1-2 scoops chocolate medical food (modified for First Line Therapy- original recipe indicated 1/4 cup chocolate protein powder)
  • 2 tbsp 70% cacao powder
  • 2 tbsp ground flaxseeds
  • 15 fresh mint leaves (about 1 1/2 tbsp loosely packed)
  • 5 ice cubes

INSTRUCTIONS:
In a blender, put milk, , cacao powder, flaxseeds, mint leaves and ice. Blend on high for about 1 to 2 minutes or until ice is fully broken down and combined. Add in medical food. Stir with wooden spoon or blend for less than 5 seconds. Pour into 2 glasses and enjoy within 30 minutes!

ALTERNATIVE:
For an icy treat later on, pour mixture into a freezer-safe container, cover top with a layer of mint and store in your freezer for 3 hours or more.
