Cauliflower Soup

Ingredients
- 4 tablespoons Earth Balance spread (Modified for First Line Therapy- original recipe called for unsalted butter)
- 1 medium onion, finely chopped
- 1 large or 2 small heads cauliflower (about 2 1/2 pounds), cored and finely chopped
- 5 cups chicken broth (use vegetable broth for a vegan or vegetarian option)
- Salt to taste
Directions
- Melt the Earth Balance spread in a soup pot over medium heat. Add the onion and cauliflower and cook, stirring occasionally, until the onion is softened but not browned, about 10 minutes. Add the chicken broth and bring to a boil. Reduce the heat and simmer until the cauliflower is softened, about 20 minutes.
- Puree the soup in batches in a blender until smooth. Season to taste with salt.
