Basic Oven-Roasted Veggies

Serving Size: 1 cup

Yields: Serving size may vary depending on type and amount of vegetables used

First Line Therapy Servings: (2 category 1 vegetables; 1 fat)

 

Ingredients: 

Garlic cloves, crushed

Olive oil

Seasonings to taste (e.g., rosemary, oregano, tarragon, basil, salt, pepper)

Any combination of the following unpeeled, washed veggies, cut into bite-sized pieces:

Eggplant

Yellow or green summer squash

Mushrooms

Asparagus

Red onion, peeled

 

Instructions:

  1. Toss veggies with crushed garlic cloves, olive oil, and sprinkle with your favorite herbs to taste.
  2. Spread in roasting pan in single layers and roast approximately 45 minutes at 400 degrees until veggies are tender and slightly brown, stirring occasionally.
  3. Season to taste. Serve immediately while warm.
