Brown-Buttered Sugar Snap Peas with Pecans

First Line Therapy Servings:

1 Serving = 1/6 of recipe (~ 1 cup)

1 1/4 Category 1 Vegetables (1.25), 1 Nut & Seed, 1 Oil

 

Prep: 10 mins;      Cook: 10 mins

  • 1 3/4 pounds sugar snap peas, trimmed
  • 3 tablespoons ghee (clarified butter- modified for First Line Therapy- original recipe called for butter)
  • 1/2 cup pecan pieces
  • Salt and pepper
Directions

  1. In a large saucepan of boiling, salted water, cook the peas until crisp-tender, 2 minutes; drain.
  2. In a large, heavy skillet, heat the ghee over medium-high heat until golden-brown and fragrant, 1 to 3 minutes. Add the pecans and cook, stirring, until lightly toasted, 2 to 3 minutes. Stir in the peas and cook until heated through; season with salt and pepper.
